Sunday lunch

Another late lunch today.  I had big plans to roast an acorn squash but it was almost 2 pm before Brad and I returned home.  So instead, I threw together big salads for us.

Southwest Salads + Mexican Beers

I used the last of some romaine lettuce, some Silver Queen corn I picked up last weekend from the farmer’s market that I roasted in frying pan, salsa, a dollop of fat-free sour cream, and some soy nuts for crunch.  Brad also had some extra sharp shredded cheddar on his.  We also had some Mexican beer from when his parents visited a couple of weekends ago.  I had the Corona Light and Brad had the Dos Equis.  The meal was very simple but also very healthy.  The only thing I regret is that fact that I forgot I had bought an avocado at TJ’s the day before.  Avocado would have been icing on the cake…uh, I mean salad.
